The video shows the process of BBQ Jackfish Phuket style. The Jackfish is placed over banana leaf, 2 and a half feet high above the heat using a coconut husk charcoal. The fish is served with tamarind sauce which is a balance flavor of tamarind, soy sauce, sugar, sliced shallots and sliced Thai chilies.
